Why Potatoes Do Not Get Crispy
Manage surface starch, moisture, spacing, fat, and doneness for crisp potatoes with tender centers.
Crisp potatoes need a dry exterior, enough fat for contact, room for steam to escape, and a tender interior. Missing any one produces tough, pale, greasy, or burned potatoes.
Diagnose the result
Pale and soft potatoes usually had too much moisture or too little space. Dark but hard potatoes saw aggressive heat before the center cooked. Greasy potatoes often cooked at weak heat or absorbed fat before a crust formed.
A dependable skillet method
- Cut potatoes into even pieces.
- Rinse away loose surface starch when using shredded or small-cut potatoes, then dry extremely well.
- For pieces thicker than about half an inch, par-cook in simmering water or in the covered skillet with a small amount of water.
- Drain and let steam escape. A dry, slightly rough surface is ideal.
- Heat the skillet, add enough cooking fat suited to browning to coat it, and arrange one layer with open space.
- Leave the first side alone until genuinely browned.
- Turn, finish cooking, and salt while hot.
Oven adjustments
Preheat the sheet pan when practical. Use high enough heat to evaporate surface moisture, spread potatoes in one layer, and turn only after the underside browns. Parchment makes cleanup easier but can reduce direct metal contact; the tradeoff may be worthwhile in a small or shared kitchen.
When the pan is already crowded
Remove half the potatoes. Continue cooking the first batch, then restore heat before the second. If water has pooled, drain it carefully and dry the pan edge before adding more oil.
Starch is useful in the right amount
A little roughed-up starch forms a craggy crust. A thick wet coating becomes glue. After par-cooking, tossing the potatoes gently can roughen their edges without turning them into mash.
